With Gooey Applesauce
It’s a quick and easy cake with a happy face. But it’s more sophisticated than it appears, being moist with applesauce, yet crunchy on top, and a delicious lemony aroma.
Preheat oven to 375° F (190° C). Grate your lemon and keep aside. Squeeze lemon juice and keep in a small bowl.
Combine flour, baking powder, margarine, granulated sugar, and salt in a big bowl.
Pat half the mixture into a, medium-sized pie pan lined with butter or baking paper.
Spread the applesauce over the batter.
Spread the remaining half of batter over the applesauce.
Sprinkle the sugar+cinnamon mixture over the top. Bake for 30 minutes. Let it cool and store the remaining cake (if there is any!) in the fridge to keep the crust firm
